School starts here tomorrow. A good mom would have started the “early to bed, early to rise” routine with her kids earlier in the week to get in the groove for school.

My Kindergartener at “Meet the Teacher” Night

Well, let’s just say I won’t be vying for any mother of the year awards this year. We were lucky to get our school shopping done in time for meet-the-teacher night last night. If I get my soon to be Kindergartener (tear – how is that possible?!) in bed by 9:00 tonight and up in time to brush her teeth and comb her hair in the morning, I’m going to declare victory.

While the start of the school year has totally snuck up on me, I have thought ahead enough to tomorrow morning to know that I’m going to be a sappy, emotional mess. I want her to have a great first day of Kindergarten. I want that to begin with a morning that does not involve tears or the two of us running around the house like crazed lunatics looking for a lost purple sandal or pink hair bow or My Little Pony backpack.

I crossed one thing off my school mom worry list by making Banana Chocolate Chip Mini Muffins for breakfast. My kids love them and they are a perfect make-ahead breakfast for kids on the go. Did I mention the recipe makes 48 mini muffins, which means I can put 4 in a baggie, freeze some, and have breakfast for days? Score!

Banana Chocolate Chip Mini Muffins

Banana Chocolate Chip Mini Muffins

  • Servings: 12-24
  • Time: 30 minutes

Banana Chocolate Chip Mini Muffins


  • 1 stick butter
  • 1 1/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 3 ripe bananas, mashed
  • 1 cup mini chocolate chips


  1. Preheat oven to 325 degrees. Spray 2 mini muffin pans generously with baking spray.
  2. In a large mixing bowl, cream butter and sugar. Add eggs, vanilla extract and sour cream and stir together.
  3. In a separate bowl, whisk together flour, baking soda, baking powder and salt. Add to sugar mixture and stir until just combined. Fold in bananas and chocolate chips.
  4. Spoon mixture into mini muffin pans and bake for 25-30 minutes or until the tops are lightly golden browned.
  5. Remove from oven and place on a cooling rack. Makes 48 mini muffins. Enjoy!
